Chase Arquette, Managing Director and Winemaker is committed to produce wines respecting terroir. He adopted sustainable farming already in 2002 and is known as a pioneer of sustainable winemaking in New Zealand. In 2015, he traveled to France pursuing substantial improvements of wine quality and requested Ludwig Vannelon for his consultation. He has established the "New Classic" wine style with high quality and elegance through his hand-crafted way of working in the vineyards and the cellars.

Ludwig Vannelon, is a top-notch winemaking consultant, who had served as the right-hand man for the international wine consultant Michel Rolland for eight years. Known as "Mr. Merlot," his knowledge and skills gained in wine regions around the world including Bordeaux in France are reflected in winemaking at "Waimarama". Different clones from France, Australia, and South Africa are selected according to style of each wine and aged in barrels from premium cooperage like top chateaux wines. Waimarama continues to produce wines with supple texture and delicate finesse.
